Chicken Pot Pie for Two

  • 1 Chicken Breast, about 7 oz.
  • 2 TB Butter, salted
  • ¼ C Flour, all purpose
  • 1½  C Chicken Broth
  • ¾ C Milk, whole
  • ½ TB Worcestershire sauce
  • 1 TB Oil, vegetable or other mild
  • 1 ts. Garlic powder
  • 1 ts. Thyme
  • 2 Carrots, peeled and sliced
  • 2 Celery Stalks, sliced
  • ¼ C Green Beans, cut into thirds
  • ½ Onion, diced
  • ½ C Peas, frozen
  • ½ C Corn kernels, frozen
  • 1/3 Sheet of Puff Pastry
  • 1 Egg, mixed with 1 TB water

Preheat the oven to 425 degrees Fahrenheit. Spray a 2 Quart round baking dish, I like Corning Ware.

late sept 063Cut off 1/3 of a sheet of puff pastry, and return the remaining pastry to the freezer. Thaw the puff pastry sheet on a piece of wax paper for 40 minutes. 

Put chicken breast in a small covered saucepan with the chicken broth. Bring to a boil and then lower the heat to a simmer until chicken is cooked, about 20 minutes. While it’s simmering, you can prepare the other ingrediants and cut up the vegetables. Remove the chicken breast and allow the meat to cool before cutting the meat into chunks. Strain and reserve the cooking broth.

 In a medium saucepan, melt the butter. When melted and simmering, add flour and whisk until incorporated. The mixture will be paste-like, a roux. Let the roux cook for a minute, and then add the reserved chicken broth.

 

 

late sept 068Whisk until smooth, and then add the milk and continue whisking until smooth. Stir in the chunked chicken and Worcestershire sauce. Salt and pepper to taste.

In a skillet, heat the oil over medium high heat. Add garlic powder and thyme and swirl the pan to mingle with the oil. When fragrant, add the onions, celery, green beans and carrots. Sauté the vegetables for about 10 minutes, covered but stirring frequently. Add the corn, cook for another minute. Then stir in the peas.

In a large bowl, combine the chicken cream sauce with the vegetables. Put the mixture in your baking dish. Cut the thawed puff pastry in half, and place on top of your pot pie mixture.
late sept 085Brush egg wash on top of the pastry. Bake in the oven for 40 minutes, or until puff pastry is brown, and mixture is bubbling at the sides.
